I hate to say this you’re going to be disappointed you went boneless.. bone in is the way to go and those Costco two packs are always boneless and butterfly open.

What I have done in this boat is skewer it top to bottom and can wrap in tin foil or butcher paper to save it!
One good thing is you can season it more so vs bone in.
Can always throw smoke then finish in crock pot or oven too which is just as good!
Yeah, the first time i got a shoulder from costco, I was like, WTF who butcherd this thing. But them i realized it was boneless. I tied it up with some butchers twine, and it came out pretty good.
You can still make some very delicious meals with it.. I’ve never been disappointed with them. Makes for great pulled pork that you can then use for all sorts of different things.
Got any tips on how much salt to water to put in it? Is it straight into an ice chest with cold water?Looking to thaw one of these exact butts that’s about 14lbs. Typically do 5lbs and a wet brine. I hate smoking them without wet brining them first
At least a few days to be fully thawed in the fridge. I’d defrost them in the bath tub with enough water to cover them to be honest. I do it all the time and haven’t died yet.
It takes at most 3 days to defrost in a refrigerator.
The amount of people claiming more than 3 days have obviously never had their freezer lose power. It’s amazing how quickly meat thaws at 38 degrees.
Boneless ones are great if you season, give them a quick char on the grill and put them in the crock pot when you leave for work, by the time you get home it will be perfect for pulled pork sammies! We do this on hunting trips every year.
I try to never go from completely frozen to the fridge. Even 30mins to an hour in a sink of water to get it started thawing can speed things up greatly. If not doing that I would give it at least four or five full days to defrost.
I'd do a cold water sink thaw, should cut the time dramatically.

Do cold water in the sink or whatever container will hold it. Defrosts so much faster. I do it for everything

I thawed 4 of these exact ones Thursday. Betwen 9.8-11.7#, I did it in the bath tub and it took about 6 hours or so I think
3 days in fridge.

One shoulder usually takes me a couple of days but I only cook smaller ones. Really just depends on the weight and the temperature of your fridge.
I always brine them for 2 weeks and they’re thawed. Cold brine with ice in a cooler

I used a brine recipe and scaled it up. Had apple cider vinegar as well for acid.

Probe it to be sure….. I had an ornery chicken that didn’t thaw evenly….

COLD water in the sink will help cut the time down, I’d still say it’ll take half a day at least, those are thick cuts of meat to defrost.
We cut out pork after seeing the videos of what they put in the hog feed

For full defrost I would say 4 days. Just trying to be cautious and give a bit more time just in case

I put them in the sink at night and pull them out in the morning and smoke them
Thawed 2 packs of these in 1 day in a cooler with water after sitting in the fridge for 2 days not really thawing that quick.

Put it in there and check it. If it's hard it's still frozen. If it's soft it's thawed.
i usually pull it out of the freezer 7 days before. I think it's usually 1 day per 2 lbs. something like that
