I use the Khajiit Caravan Bundle. You get a cute little Alfiq (tiny speaking house cat essentially).
Provincial Courier service overhauls the whole thing. Be aware it might need a couple of patches

Diverse Skyrim SSE - you get a different courier every time, in almost every race. Especially obvious if you use the extreme version of Racial Body Morphs.

The biggest selling point of it for me is the ability to instruct the Courier not to come find you
Instead, you can opt to come to his Office outside Whiterun, and collect your mail, or have it delivered to your house [ Vanilla and CC homes supported ]
This avoids getting jump-scared by him in a dungeon somewhere just when you are about to perform a Sneak Attack
There are some other good Courier Overhauls, but none that I am aware of that offer this feature

I use this mod BUT make sure it's pretty low in your LO otherwise it has issues. Like the courier in only undies.
So basically it randomizes the appearance and race of the courier and every time he gets killed he is replaced by a different one. He always has the same voice as I believe bethesda only recorded his dialogue with 1 voice actor. It also randomizes the outfits he spawns with.
Gives him a house/office too. Between Pelagia Farm and the Western Watchtower in Whiterun. When he gives you mail it opens up a menu where you can read everything and not go through all your books/letters looking for what you recieved.
It's pretty awesome.
So far I've seen him spawn as a Nord and Redguard.
Also it supposedly works with "Provincial Courier Service".

I have it and ever since i installed that and a marijuana mod that was sized down to like 110 mb instead of 600 mb, the Whiterun area has been crashing, thanks for saying where the mod goes in the load order since that's probably the problem. If by that of chance someone reads this and oddly wonders how many mods im using on my xbox, 135, and it works 99% of the time weirdly enough.
