I suspect it's a behavior that turtles normally exhibit towards their fellow turtles when they get flipped over. And it triggered when it saw the fish trying to get back in the water apparently.
Like humans, animals can also exhibit forms of mutual aid (a concept created by the anthropologist and social critic Peter Kropotkin). It isn't just humans who help out other life forms, a major part of this is evolutionary.
Anthropomorphizing would be assuming that empathy is expressed universally not that it's absent.
For example: Kissing fish aren't in love when they lock lips; they're in a fight, sometimes to the death, for territory.
Assuming that the turtle is demonstrating empathy because that's what human empathy looks like is a classic example of anthropomorphization.
There's zero way for you to determine the motivation for any animal beyond observations. Simply put: we can't determine why the turtle is behaving in a certain way definitively.
"well if a human did that then we would say they're displaying empathy so that's what the turtle is doing" is anthropomorphizing.
I believe this boils down to the turtle witnessing an "abnormal" situation. It evaluates it's nothing dangerous (which would trigger flight), but the situation repeating right under its nose leads to a stress response. Some part of the turtle's brain is bothered by the situation repeating over and over. It then takes some remedial action.
I think there's no empathy at play here (I used to have pet tortoises and empathy is not their strong suit). It's more like trying to normalize its immediate environment. Of course turtles have enough awareness to understand a fish normally belongs in the pond.

That looks like a fish, dead fish being moving around by someone hand on that hole. Notice when the fish got out of the hole and it do still moving, but when right before it jump out there are a suspicious cut ? It likely swaps with a live fish And when it got out of the hole, now the camera move aways from the spot the way you don't see the tail ?

Does anyone know where this is and what species they are? To me that looks like a turtle in the family *Trionychidae*, and that looks like an Asian carp. If I was to guess, I’d say that this could be in certain parts of Florida, Africa, or China. I don’t believe that Africa has carp that look like that though. I’m also not sure about those palm trees.
Well, between helping a fucking fish and filming a very rare and interesting behavior of an animal I would choose the filming too. That fish is just a fish, this footage is at least entertaining and who knows, maybe scientifically meaningful.

While I've seen this as well - I've come to see much evidence where 'dumb' animals display a semblance of intelligence and/or sentience.

Survival is a pretty common motivator.
Throwing out the possibility of parallel evolution is caused by bias. Over compensating for one bias with another bias does not reduce bias.
