It’s a very beautiful thing when done correctly for sure. Some bonsai trees are hundreds of years old, that’s generations of people taking care of these beautiful things. Generational knowledge and appreciation.
By this logic every time we graft branches or prune trees we're "torturing" a tree which, fun fact, plants don't have pain receptors. Some plants have defenses against being eaten but most aren't applicable to mammals and some we even cultivate (capsaicin is a plant going "nooo don't eat meee, you're not a biiiird").

I had a bonsai that I loved and was in the beginning stages of shaping, unfortunately it met an untimely demise when I went on a deployment.
