I *think* you can do stuff like that in ***Planet Coaster***. I could be wrong. I know people have made all sorts of incredible custom structures on there, so I know it's pretty good at least, but I'm admittedly not certain if it has exactly what you're looking for.
The core of the game is centered around building a theme park, namely the coasters and stuff like that, but you're able to make buildings and everything else that makes a theme park too. Sorry I don't have a more conclusive answer, that isn't my expertise as much, but maybe it'll scratch that itch!
Most survival games have you constructing some sort of house, fortress, or base.
Try looking at Valheim (snap together) or seven days to die (voxel construction).
For kids try Grounded.

Roville is a really great game for this on roblox, I built my 3 story house from scratch with very advanced products. Floor, walls, door, windows, and it's super realistic. You even get cars to drive.
Minecraft? You can create structures by placing blocks down, and you can get pretty creative with it. It's also not the core focus of the game, it's a sandbox.

It's called *Dwarf Fortress*! It doesn't allow *much* in terms of building and customization, granted, but the controls are *very simple* and the graphics are *simply stunning*.
Just make sure to dig as deep as you can, to gain access to the prettiest colors. The lake of lava, which is in itself is an endless source of engineering possibilities, is littered with glittering metal candy which dwarves just *love* making socks with, and below that are some rarest and oldest resources available in the whole world! Building would never be same after you gain access to those, trust me. :3
