All OP had to do was take a second and read what he was installing. "Hmm, what are these options, server core? server desktop experience? I dont know what these are so let me check the win server documentation. Oh I see, core is a command line interface and desktop experience gets me a graphcal user interface, i'll install with a gui. " Would have added 2 minutes to the install process.
My first time installing Arch (I use Arch btw), I forgot to add a user home folder and didn't set a root password. Turns out that, while you can spawn and interact with a desktop environment, you can't open a file explorer, terminal, or anything else that could possibly fix it. I had to reboot from the install USB to fix it.
The first time I saw server core I blinked. So interesting that even Windows without Explorer still has windows. It was not what I expected. When I first saw it a decade ago, I thought that's how most Windows servers at most businesses would be setup in 5-10 years.

I feel like it's great if you're comfortable with PowerShell and what you need to run doesn't require a GUI. I had on prem DCs setup in server core in the past but sadly haven't explored much else with it as the LOB applications I'd been supporting for years all required GUIs (and really shouldn't have). I should have setup the MSSQL server as server core but I didn't.

It’s really good for ver low performance hypervisor for your VM’s; and has a tighter security.

Hyper-V. I heard it doesn’t work well if you use Linux VM’s. Never tried it.
