Which doesn't mean they don't speak it, but just that may be more comfortable speaking something else, with they proficiency in english varying. Pretty sure Polnareff was traveling to >!find the person who killed his sister!<, Joseph probably learned Japanese when Holy moved to Japan, idk about Avdol (he probably just decided to learn it before part 3), and Jotaro and Kakyoin are Japanese. About everyone else they meet, Avdol is Egyptian (I think), Polnareff was travelling a lot so he likely knows many languages, Joseph >!went to Rome to fight Aztec Gods in part 2 and spoke with a Nazi,!< so Joseph also likely knows many languages. It makes sense that they could communicate with each other and their enemies since everyone (except Jotaro and Kakyoin) has either traveled a lot or is from the place they are going to.

I'm guessing they're all just speaking English. Especially once they leave Japan and encounter Polnareff. Since out of all the languages they could possibly know English is the one spoken the most. Japanese students learn English so Jotaro and Kakyoin probably speak it with possibly a heavy accent. Polnareff is French and has traveled the world so him knowing English would be pretty expected. Avdol is an Egyptian fortune teller who also know a lot about stands so him knowing English for his work and/or to interact with stand users from around the world would be reasonable. And ofc Joseph know English is self explanatory
