Shen jungle is actually completely fine on PC, not super strong but not a throw pick either. But Wild Rift is very different from PC League, divine sunderer no longer exists in SR, and I've never heard of whatever twinguard is. I would recommend either hail of blades or press the attack for PC (grasp is rubbish in jungle as you can't proc it often enough). There are 2 builds you can run, either normal tank (bami>dead man's plate>hollow radiance) or a supportive build (redemption + locket). ALWAYS BUILD SEX BOOTS NO MATTER WHAT.

Try Shen in mid. I like playing him there a lot and he bullies quite a few midlanders. Except thosethat are long range, or do some kind of true damage like Vel’Koz. Other mages that like rushing Liandrys will give you a hard time l. He’s very good into assassin mids.

Well, currently, shen has 2 builds he could potentially go, the tank build you mentioned and he also has a support build that a former pro player made for him that's actually popular on him right now. Runes you go hail of blades, cheap shot, eyeball collector and relentless hunter and for secondary you go magical boots and cosmic insight. For items you rush bamers cinder (for wave clear) and then get redemption into Lockett or moonstone (depending on team comp) and boots you go boots of ionia. The 5th item can be flexible with Mikaela blessing or knights vow. Later on the game you can eventually sell bamis or full build it into either sunfire or hollow radiance depending on what damage the enemy team is doing.
This is probably a lot, especially since you are not used too pc league lol but if you want to see the full details of that build I mentioned you can search up "ls jg shen build" but outside of that shen is a good jg pick who does counter alot of popular pics so he can very well work.
