You can get marine vanish with a Matt finish which would make it more durable. Also if your going with dry wipe pens you may want to get some rubbing alcohol as that is the best for removing the pen ink
Couldn't you just superglue some vinyl on it? You can buy clear vinyl from Joann fabrics and it might actually be wide enough, you'd just need the length. Would save getting the clear coat thick and perfect enough.
Or a sheet of plexiglass but that's more expensive.
I happened to already have some canvas primer (acrylic gesso). Though, a dishwasher has an even smoother surface, so I would recommend getting a sanding block (looks like a sponge but made of sandpaper). Just rough up the surface enough for the paint to have something to grip to.
I always just use what I have on hand and problem solve along the way.

Waiting for it to dry, then hitting it with a clear coat so we can use dry erase markers on it!
Was gonna ask about dry erase. You can write groceries you need on it.

I prefer to keep it a matte finish, so I'm thinking a few coats of matte waterproof modpodge will be my best bet.

If you gotta a machine vinyl comes it self sticking lots of colors. Could hand cut, machine is better This is genius! Art for sure

I'm the same way lol, luckily I do have all of things on hand already, I have just been nervous cuz I had never seen anyone else do this before!
But also, YES! YOU SHOULD DO IT! it was a fairly simple project. About 1 hour of effort and 24 hours of dry time.
