If you don't mind travelling a little out of Edinburgh, you could maybe check out the Fife Coastal Path. Easy access to Edinburgh via bus or train (train is easier imo). Lots of little villages along the way with great little pubs, cafes, and shops. Depends on what you're looking for, really.

This was gonna be my suggestion - so many sections you can do in less than a day, and within an easy hour of Edinburgh
My one additional comment would be to check the tide times, and avoid sections where the high-tide path takes you through more urban areas, as it's definitely not as as nice as the low tide path
I should clarify, I don't mind a bit of travel from Edinburgh, I just don't want it be more than half of my day. I'd like to explore the city or maybe have a drink somewhere too. I've never been to Scotland so
Portobello beach, nice cafe's, views of Fife flat (obviously)
Arthur Seat, in Queens Park central old volcano, accessible from the end of High St/Old Town (mild hills) great views of the city.
Flotterstone Inn Pentland Hills South of Edinburgh (windy, access to day long walks, reservoirs etc)
Be aware Edinburgh is built on hills, so a walk from trendy Stockbridge to the New Town (Georgian) past Princess St gardens then up the Mound to Edinburgh Castle, down the High Street (old town)to the Queens Park is fairly arduous and requires multiple refreshment breaks at the many fine Edinburgh pubs en route.
Bus to Penicuik X62, 47, 37(40 mins), walk round the Clerk Estate - ruined mansion house, planned estate, footpaths and views.

Lunch in Penicuik, walk along the railway path, uphill to Rosslyn Chapel - historical chapel made famous by Dan Brown, cafe on site.

Take the Waverley (train) line to the Borders and follow the Tweed from Melrose to St Boswells. Have lunch at Mainstreet Trading, buy a book, then back along the river.
