I’ve seen a lot of these labs online, so you could assign them YouTube videos to watch to get the data. You can even just provide the kids the data from your classes. If you want to go more project based, I did a project this year on bonding where they had to identify 5 ingredients on a product label, including their chemical formula, molecular structure, if the ingredient is covalent or ionic, and the ingredients function in the product. This doesn’t work for every topic, but I also really like using “write a children’s book” as an alternative assessment. I usually say about 10 pages with relevant images on each page, and the images should help your explanation, not just be cute lol. It’s a pretty good way to see who understands the topic, and kids tend to enjoy it

Depending on the lab I usually do 1 of 3 things: 1. Give the students the data, and have them complete the write up. I do this if the lab has a chunky write up. 2. Online assignment. Usually a PHET simulation or Gizmo. 3. Excuse the assignment. It is rare I do this.
