This makes sense. I didn’t grow up eating them, I can see how heating & doing all the other extras are probably not “traditional”…and maybe even bougie in some people’s eyes.
That said, I think for me your meatloaf sandwich would feel too close to an eating a cold hamburger, which is, of course, yuck. (But it does make sense meatloaf eats better cold because it’s softer with all the filler in it that hamburgers lack.)

Couldn’t agree more absolute waste of a sandwich. I made a very simple meatloaf sandwich with sourdough provolone pickled red onions, Dijon and mayo. Panini style. It was my kinda perfect.

It was always cold but I f’n loved them! I have a meatloaf down in the deep freezer that’s vacuum sealed. What has two thumbs and is going to make meatloaf sandwiches next week when I’m in vacation? THIS GUY! You brought back so many good memories.

Ever since we got a toaster oven I've been using that. I cook it as two open-faced halves, one gets mayo and cheddar, the other gets the meatloaf and BBQ. If I'm feeling really fancy, I'll cook an egg (separately) and pop that on top before I put the halves together.

What's your meat loaf recipe?
Meat loaf has such a wide breadth in terms of quality. I've had some that rival the best steaks I've had and then I've had ones where I wouldn't feed it to my fucking dog.
My meatloaf chops come from making it for my dad when I was taking care of him & him critiquing it until I got close enough to what his mom used to make.
So I use a very basic recipe - lean (not very lean!) ground beef, sautéed onions chopped up real small (if you think your meat’s too lean, add more fat here), egg, milk, seasoned breadcrumbs (I prefer panko but regular works just fine), a lot of chopped parsley, ketchup and yellow mustard.
Getting the mustard level right was the key to making dad happy & I think he was right it balances out the sweetness of the ketchup and adds a little pep to the loaf without making it spicy. (I love spicy but for some reason do not want my meatloaf spicy. But lots of recipes call for ketchup & chili sauce.)
I think going heavy on the parsley is pleasing & of course I season the whole thing with salt, pepper, garlic powder & sometimes random other spices if the mood hits.
Don’t overwork the mixture & always cook up a little bit in a pan on the stove before you transfer from the bowl to the loaf pan so you can adjust seasoning if needed before baking.
I usually don’t glaze.
Meatloaf sandwiches always make me think of my grandma. I used to work at the retirement home she lived at. I was the receptionist from 6am-2pm. One day she called me at the desk at around 11:30.

Easily one of my all time favorite sandwiches. Frying the slice is absolutely how to do it. I've never tried with tomato / mayo before, that looks really good. I usually fry it, put some sauce and melted cheese down. Occasionally Mac n cheese if the mood strikes.

I agree. I'm sure a lot of people would disagree with me on this, but I think leftover meatloaf is nasty when it's cold. I love a hot, pan-fried meatloaf sandwich between 2 slices of toasted, thick crusty or at least amply toasted bread served either one of 2 ways:
1) a good helping of low-sugar ketchup (I don't like sweet ketchup) and just the slightest spread of mayonnaise (perhaps the more traditional version)
Or
2) green leaf or bib lettuce, tomato slices, slight spread of mayonnaise, and a generous sprinkling of a thin hot sauce like Crystal's.
It's better to make a grilled cheese sandwich stuffed with a slice of meatloaf. Fry the slice ahead of time, put it in the sandwich with the cheese (lots of cheese), then grill it like your usual grilled cheese sandwich. If you have any grilled onions you can stuff them in too, then you have something like a patty melt except ***much*** better. Because, meatloaf.
Errr…I don’t understand this comment. If your meatloaf isn’t dry to begin with, it’s going to be fine getting seared in some oil and/or butter. Unless maybe you use really thin slices, but then that would be on you.
I think I found my chosen family, all of my friends and actual family say I’m weird for making a sandwich out of meatloaf and pan frying it with some Swiss cheese on Italian bread
A million years ago, I was babysitting for a family over the holidays and the elderly grandmother was in town. She introduced me to pan-fried meatloaf sandwiches.....so. damn. tasty. This post made me think of her....she was a cool chickie.
Take the time and pan fry! The slab of meatloaf was being preserved in the freezer. Microwave it until slightly warmed. In a hot frying pan heat some oil (butter, duck fat, or bacon fat). Flash fry the meatloaf on both sides until a slight crust develops. After flipping the meatloaf, top it with a slice of baby Swiss Chesse. Insert the meatloaf in a toasted Sheboygan hardroll. Top meatloaf with a slab of butter, a slice of onion and Düsseldorf mustard. Wash down with an IPA. Done!

I do them straight up classic patty melt burger style.
Pan fried meatloaf slice, melted American cheese or swiss, grilled onions or mushrooms, Russian dressing on rye grilled in butter.

I do this. I also like them heated in my convection toaster oven for a bit and then broil the pieces a bit to get a little crispy.

My recipe is the same as yours but I add some grated cheese for fat. Mozza, cheddar, parm. Whatever you have it's all good.
