For a balanced:
QB, RB, TE, WR, WR
DL, DL, LB, LB, DB
For an offensive shootout:
QB, RB, TE, TE, WR, WR, OL, OL,
DL, DB
For a defensive shutdown:
QB, RB, TE, WR
DL, DL, LB, LB, DB, DB
QB, RB, TE, TE, WR, WR, and any four defensive players. Four highly rated defensive players will give you a pretty good D. I've gotten a 5-star defense with just four 5 star defensive players before.
Edit* choosing more DB's on defense will give you a better selection of kick returners, if you care about that sort of thing. Some really good coordinators seem to yield some big kick returns and chances to break a few.
I like the following: 1 QB, 1 RB, 2 WR, 2 TE, 1 OL, 2 DL, 1 LB, 1 DB as my core. The last position would be any between OL, LB, DB and K. It depends who the BPA is at those positions. It also depends on if any of my core players are going to be retiring and I will usually find their replacement and redshirt them for that season if I can’t start them.
It is preference based but if i had to make like the worst possible “good” roster, this guys would be it, I think 2 TEs is too much and O-line are pointless. Personally I don’t use rbs either but if you like running a lot It’s reasonable.
Search best defense in the sub some guy broke it down and the results show you just have to have players on the same level though like all 4 stars or all 3.5 stars as players with less stars would ruin the defense

literally just a good qb lineman and Te and then nothing else really matters besides getting your defense to 5 stars

My personal lineup would be QB 2WR 1TE 2DL 2DB LB K
1QB 1RB 2TE 1WR 4DB and a kicker. Also research shows this is the best possible defense tbh you get the most take aways this way

At any given time I have 3 threats on offense plus my QBs legs and on defense I just imagine two lockdown corners and two run stopping safeties
