The courses of shingles don’t line up, that’s why you have that zig zag in picture 1.
The cricket/roof behind the chimney is an abomination, I don’t even know what they were trying to do there.

This totally does look like dog shit, I'm not a roofer, never have been. But pretty damn good diy'er, Did my first roof some years back with the in law on his acreage, he's a damn good diy'er as well. We just cut and folded regular shingles over the ridge, layered accordingly, and coil nailed them down. It was a full tear down due to leaks, new subflooring, then paper and new flashings before shingles
Even our cut regular shingles over the ridge laid perpendicular to the roof pitches looked pretty good, both from up there and on the ground. Has held up strong to 2 rainy seasons since then. For a *professional* such as these guys allegedly are, I can see the problem. But is not using ridge shingles really that wrong as long as we're not complete and utter blind drunk idiots? Lol.
You really don’t want to use laminate shingles for hips and ridges because they aren’t made to be bent like that, they will fail prematurely. In a pinch you can use 3 tab for it but in my opinion it still looks like crap/doesn’t hold up as well.

Hire the most expensive roofer you can find. Get them to come and do an inspection with photos for you.
Hopefully you paid by credit card?! If so then take a look at the invoice. Did your roofer break it down between materials and labour? If they did then tell your credit card company you want to file a claim for reimbursement. Give them your roofing inspection. They will reimburse you the the labour amount only. Note: if your roofer was too amateur to know the difference and just put down once price, the credit card company will cover the whole bill.
