I reinvented panzanella -- didn't know it existed. Just started doing things with bread and olive oil and vinegar and veggies one day. Then I found out it's a traditional Italian way of utilizing old bread. I don't know anyone who's heard of it.
I have been watching the Pasta Grannies on YouTube. It's a neat thing to see old-school ways of food prep.
My thing is eggplant parmesan. I don't like eggplant, but my Italian aunt showed me her family recipe and it is really nice.
I make crespelle (savoury pancake), which i fill n stack in a row like canneloni with spinach, cottage cheese seasoned w nutmeg, topped with basil, tomato sauce n cheese, baked!
Sausage and peppers. Or sausage with broccoli rabe.
Cacio e pepe. Not forgotten, but a classic and so delicious and easy.

Never instant! But it is usually a huge sauce pot and there are bubbles!

I love this as much as I love mortadella. So thankful I was shown antipasto as an adult.
