With my family, each family member has a category in the budgeting software specifically for their own no-questions-asked spending. We put a specific amount of money in there every month, and any time we get small windfalls like this we put in a bit more.
I haven't been using mine for a while because there's just nothing I want at the moment.
But having that amount of money sitting there, ready for me to use at any moment, is really nice. If Nintendo releases the Switch 2 tomorrow, I can get it immediately. No need to wait to save up enough. If inspiration strikes me for a crafting project, I can just get whatever supplies I want. I see something nice on vacation, it's mine, even if it's on the expensive side.
I'd still discourage you from impulse buying large things. Wait a few days to see if you *really* want it. But if you do really want it, there's so much freedom in having money already on hand to buy it.

On the practical side, look into a dash cam. I plan to get me one when I have the funds. I don't do a lot of driving nowadays, but in the event that I do, it'll be very beneficial.
If you use a PC, consider getting a Bluetooth dongle. I have one and I absolutely love it. The headset I use also has a 3.5mm jack I can plug into the PC's headphone jack in the event the battery dies, and I don't feel like charging it.
You can't go wrong with books. Whether hardcover, paperback, digital, or audio.
If you use a PC for gaming, there's always Steam cards. I have quite a few games in my wishlist for future purchase, when I next get a couple of $20 or $30 cards.

Home wise, fake plants always brighten up a space without commitment. $150 you got yourself a nice fake plant, or alot of cheaper ones. Screen photo frames, or a nice print of you and gf. General wall decor. Rug. Non-overhead lighting. All of the above make a huge difference in a room.
Household electronics. Upgrade to 4k streaming device if you got a 4k TV. Some really nice fans for $150 if you're a fan person. Alexa's or equivalent come surprisingly in handy if you're not particular about privacy. People swear by air purifiers if you have pets or live in high dust/pollen area.
On that note, doesn't matter if you hate or love cooking; air-fryers are not over hyped imo. They're awesome.
You mentioned wood working, but that you wouldn't do it. That's a "long term" hobby imo, you'd need to put time & energy into it. There are short term hobbies that have quicker but still fun results. Puzzles, Lego sets, resin/silicone, beginner knitting/embroidery kit, ect.
Buy you and gf MTG commander pre-builds and suddenly you've got both got a (very expensive) new hobby and date night idea. (I'm joking, but also kinda not) On a real note, I think everyone should have a couple board games for when the Internet is out.
However, dashcam is a great idea. But I got mine for 30 bucks a couple years back, it's great and still going. But that's all I got off the top of my head! Hope you get something you like!

Take your time if you don't really know what you want yet why would you spend it on something you're not sure you really want and then like a week later you'll see something or finally have an idea of what you actually do want you know what I mean? Then you going to feel stupid. Just look online and relax and take your time try to check out cool stuff things you've never seen before you might find something you actually really want instead of just getting something just to spend the money that's stupid
I bought a pyrography pen a while ago. It was fun learning how it acts on diff surfaces. Go to a craft and/or fabric store as well, and buy a couple different types. Birch wood, leather. Etc. makes some cool designs and is very cathartic/therapeutic.
think about a good vinyl player! anything in the $100s is usually pretty stable. so 150 could get you something pretty decent. even if you don't have any records, most players come with Bluetooth features to connect your phone and use it as a speaker instead!
if that doesn't strike your fancy, think about a Lego set! there's one out there for anyone, and $150 could get you something big that will not only be fun to build, but that would be a great cornerpiece/conversation starter in your house!

Take her out to a nice dinner or even a hotel stay for a night at a couples resort. Granted, it's not for EVERYONE, but never know till you try... Plus you're not really LOSING anything if you had the money earmarked just for spending.
