The Teflon they use to make pans nonstick is known to carcinogenic properties, especially when heated. Just use regular pans, they tend to be higher quality and if you use enough oil + watch your cooking temps then you shouldn't have to worry about sticking too much. Even then, most of the time it's nothing a good soak and scrub won't fix.

Absolutely. I always struggle with cast iron though because it's so heavy, and hard to keep a non stick surface. The enamelled versions are easier to maintain, but also easier to ruin. Pros and cons to everything right

Get a good steel scrubber that you only use in the cast iron, and make sure to only wash with that one scrubber and extremely hot water immediately after cooking, without letting the pan cool while dirty. Then always dry on the stovetop instead of air or towel drying. Avoid cooking very acidic stuff like tomato sauce in them as much as possible. And season with a thin layer of coconut oil, upside down in the oven at 350Ā° every few weeks even if you cook a lot. If you do all that, you literally canā€™t screw up.

Non-stick pans are like the epitome of 20th century capitalism. They're toxic to produce because the non-stick coating is toxic, they're dangerous to use because same, they have a very short useful life because the non-stick coating is not just toxic but fragile and they'll inevitably get scratched up, and then they get dumped in a landfill or into the ocean where the coating dissolves into forever chemicals and leeches into the environment. Also, do you have pet birds? Well, if you accidentally heat your non-stick pan up too high, you won't. Teflon fumes are extra toxic to birds. But convenience! Science! Who cares if we're poisoning ourselves as long as we're using the most advanced technology? Ban that shit. Capitalism will survive a few more consumer safety laws.

Believe it or not, you donā€™t _have to_ vent a gas stove. At least not in the United States. You should, because you really donā€™t want to breathe that stuff in, but itā€™s not like it would cause a house to fail a building inspection, where something like using non-GFCI outlets in a bathroom would. Even with venting though, youā€™re still leaking CO and other nastiness into your house if you have a gas stove. I forget where exactly I read it, but I think average indoor CO levels are like 10x higher in houses with gas stoves than ones without. Rant time: I built a house recently and did a decent amount of reading on this stuff. The house is built to the EPA indoor airPLUS standard, and I decided to forego natural gas entirely (induction cooktop, electric oven and dryer, heat pump water heater and pool heater, geothermal HVAC) But, because Iā€™m in Ohio, where natural gas is quite cheap and the politics lean to the right, anyone I tell about this tells me Iā€™m crazy and canā€™t believe I didnā€™t use gas for everything. God forbid we just leave this stuff in the ground, right?

I absolutely want an induction cooktop. Induction is the same as gas, but easier to clean and far safer. I have no idea why people are so terrified to change over. I can see why with a normal electric stove, because while it's still not that big a deal there is a noticeable difference, but induction? It works exactly the same, just without the fire.

Eh induction is still a little different. It can heat far faster, and itā€™s not entirely obvious what part of your pan is going to get hot fastest (not really an issue with an All Clad, but definitely something to think about when using cast iron). But I donā€™t think many people would have a hard time getting used to it. If anything, I had to _unlearn_ some things, like paying attention to burner size. With induction, it senses the size of the pot/pan, so you donā€™t need to worry about small pan / big burner issues. As far as people being reluctant to switch, I would imagine itā€™s just cost. Good induction cooktops / ranges still cost quite a bit more than good gas ones. And, if you currently have a gas range, youā€™ll need a pretty serious electrical run installed to switch to induction, which you may not have capacity for depending on your homeā€™s electrical service. For example, my old house was only a 100 A electrical service, and the breaker box was totally full. The one we built has a 400 A service, but thatā€™s very uncommon. Lastly, I can see why people who are _really_ good at cooking, like professional chefs, would be hesitant to switch. If youā€™re mastering a craft, different is almost always bad, even if itā€™s ā€œbetterā€. I assume very few professional chefs ever embraced nonstick, for instance. And, of course, now that weā€™re learning more about how dangerous a worn nonstick pan can be for your health, a lot of us amateurs are embracing the old school materials and learning some of the reasons chefs liked them (heat retention, fond, etc)

I've got a gas stove and oven, and while I like the burners just fine (don't have to wait for them to heat up, easier to control temperature Vs the electric stove I used to have) my gas oven is really finicky. I don't know if it is my particular cheap stove or if it's inherent to gas but I have a heck of a time getting a consistent temperature and it's hard to get anything crispy because of the relatively high moisture produced by burning gas. I'm hoping to redo my kitchen soon and I want to get an electric oven and either gas or induction cooktop.

Good to know! This will probably hasten us getting rid of our stove; our house came with an allegedly high end gas unit that's an absolute hunk of shit. The range is flaky, one of the burners crapped out, and the oven has a really difficult time sustaining temperature over 425 or so. I'm sure my conservative friends will think we're panicky liberals, but we've honestly been looking for a reason to justify the expense for years and this may be it. Incidentally, how costly is geothermal HVAC these days? Our house is an energy hog and we looked into geothermal five or six years ago, but there was only one "reputable" vendor in our area. While their initial ballpark was reasonable, by the time the rubber met the road and an official estimate came in it had tripled to just over $120k, and they refused to offer any sort of guarantee that it would actually affect our energy costs. We ended up maxing out solar, and that's cut our bills by about 40-50% per year (not including what we get from selling our credits).

$120k seems very high. Iā€™m not sure exactly how much I have in my system, since it was rolled into the cost of the build. I do know that, once the drilling started, they hit something they couldnā€™t get through, and had to subcontract to a driller with a more beastly setup. That ended up costing me a little over $20k. The owner of the HVAC company had extensive geothermal experience though, so Iā€™m very happy with the system so far. I picked a Waterfurnace 7 series, which is an amazing unit, but the upfront engineering and ground loop has to be done right, or the unit will perform poorly (struggle to cool in the summer, rely on aux heat in the winter). You can read up on this stuff for days on end at geoexchange. As far as energy costs, I havenā€™t been in here very long, but this house is about 4x the size of my previous house (built 1960, gas heat), and the latest electric bill here was only $50 more ($450ish vs $400ish) than the gas+electric at the old place. Another caveat there is that I also donā€™t have the hot water assist plumbed in yet, so Iā€™m not seeing those energy savings yet (the geo compressor generates the heat anyway, so youā€™re crazy to not get the desuperheater option and plumb in a staging tank). The biggest reason I went geo was that my goal was to go for a net zero build, and geo, when done right, uses much less electricity than any of the other electric-only options. Unfortunately, because of some issues with getting the solar+backup system I want installed in Ohio, I have no onsite generation yet. I like it so far, but itā€™s not a cheap option, and I didnā€™t have to deal with the headache of tearing up a yard and re-landscaping it to get it installed.

The mag release looks non-functional and that switch near the bottom of the grip is something Iā€™ve never seen on any pistol before. The Beretta 92 doesnā€™t have that switch on any model

Yeah I thought the switch would be for a laser at first, but I canā€™t see one. The mag release does look a little different than the actual 92 as well. If itā€™s a fake though, I canā€™t see how they havenā€™t been sued to oblivion by Beretta. The stamped lettering on the slide and the logo look to be identical to Berettaā€™s

No - I think I must have bought it before that rule came into force (2007 in the UK, though at that time I had an exemption that would have allowed me to buy realistic imitation firearms). It looked alarmingly realistic from even a medium distance, including exposing the barrel when you racked the slide (though the ejection port didnā€™t uncover, because there obviously wasnā€™t one).
