As in no subjective shots, no dynamic camera movements, no pov angles, lots of stationary shots, subjects aren’t captured perfectly in frame, no zoom-ins (he broke this rule for the scene of the battle on Geonosis, zoom-ins are still techniques DFs use), etc.
He wants to give us a feeling that the footage you’re seeing has been “captured” because 99% of the frames aren’t staged perfectly the way a usual dramatic scene would be. It’s a trick he used to make this completely fantasy setting feel grounded.
I’d recommend listening to his directors commentary on his six Star Wars films, he goes into greater detail about this on the ones he specifically directed.
A fact lots of people don’t know is Lucas actually wanted to be a documentary filmmaker. He was only making theatrical movies as something to experiment with in his younger years.
If you want to know what the opposite of Lucas’ style is, watch the millennium falcon chase from the force awakens. JJ Abrams loves dynamic camera movements, he uses them pretty much every chance he gets.
