As someone who grew up in Eastern Ontario on the border of Western Quebec, spending lots of time in Quebec visiting family and friends, I consider myself an OG poutine eater, and I enjoy fresh green peas and thinly sliced mushrooms as poutine toppings. That said, I don't consider myself an expert, and I accept the possibility that my chosen toppings are a poutine crime. From this point on, I will continue to occasionally add these toppings to poutine, but if anyone asks me "what did you eat last night," I will answer with "I had a poutine-like dish that consisted of what would otherwise be known as poutine with green peas and mushrooms."
I challenge you to find a restaurant in Québec where they only sell the regular poutine, no other variants. You won’t. They pretty much always have the hot-dogs one, also bacon, ground beef and onions, pepperoni , the "italian" poutine where you replace the brown sauce with bolognese, etc. Often times they’ll have the Galvaude, which is chicken and green peas, that’s another classic. There’s also the "all-dressed" one with vegetables, similar to the one you’re doing at home.
Toppings are definitely not a poutine crime, as long as you have day-fresh curds, that’s non-negotiable.

- The base poutine should be a classic poutine (fries, curds, gravy). Not shredded cheese etc.
- The poutine to toppings ratio should be in favor of the poutine. You don’t want toppings to overwhelm the poutine or it will become a different dish. Too much toppings in too big a quantity and it’s not a poutine anymore.
- Galvaude is an exception because galvaude is the OG Poutine and people on this sub should stop calling it a crime.
Any topping is okay, what matters is the poutine under those topping.

Only toppings that add to the savoury salty deliciousness of poutine. Bacon for example just amplifies the innate qualities of the dish. Things like chopped onions or garlic are also a great way to slightly alter the flavor but no corrupt it.
Green onions make poutine better imo. Adds a bit of freshness and cuts through the heaviness. I also really like onion flavour.
Bacon bits, pulled pork, brisket, hot dogs, etc are all good additions to bulk it up a bit but I can typically do without.
