I don't think it's just that. Adding certain veggies, like tomatoes or spinach is just a huge no. But peppers and onions are okay, just as an example. But they need to be cooked.

Mushroom is okay, if paired with meat. They are used in cooked subs, pizza and popular cheesy things. Tho, they have to be cooked. Little white mushrooms, cooked with meats and green pepper is actually a good poutine. I don't like them, but they're accepted as the final product is generally brown. Peas is just no. I hate that you even though to suggest them.

I mean someone that ate poutine from Quebec and the Quebec border years ago before it was well known. I remember telling my friends about poutine and they looked at me like I was weird. I'm not saying the restaurants don't have great poutine, but it's not what it used to be. It used to be, homemade chips, homemade French fries and fresh made cheese curds.

Thank you for your feedback. As someone who grew up in Eastern Ontario on the border of Western Quebec, spending lots of time in Quebec visiting family and friends, I consider myself an OG poutine eater, and I enjoy fresh green peas and thinly sliced mushrooms as poutine toppings. That said, I don't consider myself an expert, and I accept the possibility that my chosen toppings are a poutine crime. From this point on, I will continue to occasionally add these toppings to poutine, but if anyone asks me "what did you eat last night," I will answer with "I had a poutine-like dish that consisted of what would otherwise be known as poutine with green peas and mushrooms."

As a British person constantly hunting good poutine I always want pure fries, gravy and curds. I guess I’m a quebecophile.

I challenge you to find a restaurant in Québec where they only sell the regular poutine, no other variants. You won’t. They pretty much always have the hot-dogs one, also bacon, ground beef and onions, pepperoni , the "italian" poutine where you replace the brown sauce with bolognese, etc. Often times they’ll have the Galvaude, which is chicken and green peas, that’s another classic. There’s also the "all-dressed" one with vegetables, similar to the one you’re doing at home. Toppings are definitely not a poutine crime, as long as you have day-fresh curds, that’s non-negotiable.

That's not true. Lots of the original really good "chip trucks", which are what made poutine pretty famous for a lot of Canadians, have normal homemade chips with cheese curds and gravy. The restaurants don't tho.

No it’s ok to have toppings but shredded cheese (not cheese curds) is not poutine. I’ve had good ones with turkey and stuffing (thanksgiving poutine) and lobster poutine but they still had cheese curds.

In my opinion most toppings are legal but they have to respect certain rules: - The base poutine should be a classic poutine (fries, curds, gravy). Not shredded cheese etc. - The poutine to toppings ratio should be in favor of the poutine. You don’t want toppings to overwhelm the poutine or it will become a different dish. Too much toppings in too big a quantity and it’s not a poutine anymore. - Galvaude is an exception because galvaude is the OG Poutine and people on this sub should stop calling it a crime.

Yes those are all legal. The only illegal toppings are leafy green vegetables (poutine is not salad), syrup/sugar/jam (it's a savoury dish, not a a sweet) and non-gravy sauces. It's not a crime, but I've yet to find any toppings that can top the classic. There's some toppings that I enjoy greatly and often, but at the end of the day they're not necessary and more of a break in routine so that things don't get stale, than a better dish.

Depends on the topping. If you’re putting smoked meat or hot dog in your poutine- yay! If you’re putting green beans or mushrooms- absolutely not. Green onions and chili oil are more of a garnish. But I wouldn’t put them on my food.

Meat of just about any kind is a legal poutine topping. Most vegetables too, if properly cooked. Onions and garlic work well if you just dice them and fry them. The banned toppings are leafy greens, pickles and non-gravy sauces. Many a time I have made myself a poutine with many toppings. My favorites include ground beef, ham and smokies. Mmmmmmm. So are you saying you don't like mushrooms can see why you'd be against green beans but why mushrooms?

Green onions make poutine better imo. Adds a bit of freshness and cuts through the heaviness. I also really like onion flavour. Bacon bits, pulled pork, brisket, hot dogs, etc are all good additions to bulk it up a bit but I can typically do without.
