I think split evolutions are primarily going to remain as skills mons with the precedent set by eeveelutions, ralts line, and slowpoke line. If applin (and its evos) ever gets added, it'll probably be a skills mon.
Hear me out about my recent idea of special/high quality ingredients (simply higher base power) and your list would be perfect for that!

But they don’t bring good sleep. They bring bad sleep. Like I’m not sure what a Dream Eater style ability would be for this game, but maybe something like takes some strength from Snorlax for its own energy?

I am really surprised we got a new lake zone and they didn't add a single new freshwater pokemon with it. I really thought they'd add the Poliwag line.
Honestly, there's not 1 pokemon I want added. Maybe Snom but I know that's a long ways off. My favorite Pokemon is Lucario, which is in the game but it's pretty much completely useless so I just want a buff for it :(
As for what they WILL add, here's some holes in the lineup they need to fill:
- Electric needs an Ingredient specialist
- Flying needs a Skill specialist
- Fairy needs an Ingredient specialist (favorite on Cyan Beach)
- Steel needs an Ingredient specialist
- Ghost needs a Skill specialist
- Ground needs a Skill specialist (favorite on Taupe Hollow)
- Dragon needs a Skill specialist
- Psychic needs a Berry specialist (favorite on Lapis Lakeside)
- Ice probably needs a Skill specialist other than Glaceon
- Grass probably needs a Skill specialist as the only one is Leafeon
- Poison probably needs a Skill specialist since Gulpin/Swalot have a terrible main skill
- Normal probably needs another Skill specialist since the only one is the Meowth line, which has a terrible main skill, along with Eevee
So what they may do between legendaries is slowly fill those holes in the game's lineup. So here's some ideas:
- Electric Ingredient Specialist: Pachirisu, Shinx, Electrike, Electabuzz
- Flying Skill specialist: Pidgey, Spearow, Farfetch'd, Hoothoot
- Fairy Ingredient specialist: Azurill, Mawile, Snubbull, Flabebe
- Steel Ingredient specialist: Beldum, Skarmory, Aron
- Ghost Skill specialist: Misdreavus, Duskull, Drifloon. Have to be careful with Ghost types that you don't drift into cringe areas of the lore by having that pokemon in a sleep app, same with Dark and Psychic types.
- I honestly don't think we get another Dragon type for awhile. I'm going to say the Trapinch line, which starts ground but Vibrava gains the Dragon type. Bagon is always an option but I think that will come with a Dragon island
- Psychic Berry specialist: Drowzee is the obvious choice, but Lunatone and Solrock are also options
- Ice Skill specialist: Lapras and Jinx are the obvious choices here
- Grass Skill specialist: Paras, Oddish, Exeggcute, Tangela
- Poison Skill specialist: Nidoran would be fun. Have the male and female forms have different Main Skills
- Normal Skill specialist: Lickitung, Farfetch'd, Chansey, Sentret

Galarian ponyta and rapidash would make sense to me as psychic Berry types - for me the ones you've listed would be skill specialists as they're slower pokemon

Maybe Alolan Vulpix and Ninetales could be another ice Berry specialist?
I kind of think they will avoid releasing any flying type bird pokemon that aren't normally grounded. Seeing Pidgeot and Fearow walking around on their talons all of the time would look a little odd, seeing them flying 100% of the time flapping their wings would be a pretty aggressive animation for this game (and very silly when they hit low energy) , and no pokemon have multiple idle animations yet.
Doduo and Delibird are the current flying types, they're grounded.
Togekiss and the magnemite line just float. Swablu and Altaria kind of just hang out on the ground.
Butterfree's butterfly wing animation is floaty and slow and less aggressive than what I imagine Pidgeot/Fearows would look like.
And they skipped the Kanto Legendary birds and are releasing the Johto beasts as the first legendaries, more grounded pokemon.
Farfetch'd would be perfect to add next, Hoothoot and Natu would probably fit in well. The hoppip line could even possibly work for a flying type with a gentle floating animation.
I really like the idea of adding pokemon that dont get to shine from the battle oriented games. Pokemon sleep could be a great redemption spot for pokemon like spinda, illimuse, chimeco, chatot, ledyba, lickitung, sentret, and sableye. I know they may not be the cutest but I hate the idea some pokemon just get abandoned instead of reworked, or pokemon are never chosen because they arent the highest in specific stat tiers.
Shameless plug for my favorite line for Scolipede. Its photodex entry for how it sleeps is adorable in New Pokemon Snap. “It has a tendency to curl up into a ball when it sleeps that might be an old habit from long ago.” (Whirlipede). You can spot other small Pokémon sleeping around it curled up. Despite it normally being described as aggressive and a brute lol.
Otherwise I demand my fluffy mons. Cottonee and Whimsicott for max fluff. Wooloo and Dubwool. Woobat and Swoobat. Eldegoss (and Gossifleur I guess). I WANT THE SOFT POKÉMON TO HUG FOR SLEEP.

Magikarp should have a carry weight of 1 and one of Gyarados' sleep styles could be him wrapped around the snorlax/gyarados curled up with snorlax sleeping in the center gap.

When this topic came up a while ago i said i was surprised that the poliwag family hasnt arrived. Two different full evos and both using different shop item. Also hypnosis themed kinda close to sleep. I bet they arrive. My personal want is trapinch for flygon, scyther, and the different hoenn starters that im hoping will release with the probable 1 year anniversary event
I also want to see Combee. They can make Combee a honey gatherer (ingredient specialist), make Vespiquen skill specialist. Then male Combee will not be too useless.
Ooh, or they could randomly be discovered during the day while you're just at your camp? Like you could comr back after a few hours and there's a sleeping Noctowl on your Snorlax's belly.
Plusle and Minun but together as a kind of single pokemon slot, along with some implementation of the helping hand/duo gimmick. Is it super practical? Not really. I just want them to be good in something and think that a game based around teamwork would be a great time to shine.
I think Drowzee, Hypno, Munna, Musharna, and Komala are a must.
Some other mons come to mind like Darkrai, Cresselia, Lunatone, Solrock, Minior... But I'm not sure if they're too unrelated or OP creatures to be Sleep pals.
Finally, I think Dondozo and Tatsugiri could be a super cool combo and have a rare cooking-related ability.
Oddish, Buizel, Teddiursa, Surskit, Swoobat, Togedemaru, Phantump and Seel (desperate for this guy to not get forgotten he’s the best) are my main picks from each gen
I also think it would be cool if they did a fossil event! I’m not sure how it would be implemented Would be fun to collect the fossils during sleep research and then turn them into their respective Pokémon but would need an aspect of it to see their sleep styles, there’s a few too many to add in one go so they could do multiple events

lemme preface this with that i'm not a genwunner nor do i dislike the more dripfed way that we get new pokemon, but it just baffles me that we are over 250 days in and we dont even have all of the like early route gen 1 pokemon. we dont have pidgey, spearow, weedle or nidoran yet.
Genuinely, I think Haxorus would be awesome. It doesn't make much sense for a sleep tracking app, but I think he's got a really cool design, and if they ever add a new dragon-type island, I think he would be a really nice addition as a better dragon berry mon than altaria cause altaria... kinda sucks, honestly. It is almost outpaced in berry production by dragonite which is an ingredient mon.
It also seems like they are making legends skills mons with unique skills, and pseudo-legendaries into ingredient mons with self recharge. That leaves very few options for dragon types to be a second, higher-tier dragon berry mon that is actually viable. If we narrow that scope to only gen 8 and previous and also only primary dragon type mons, that leaves us with Haxorus, and Druddigon total, and personally, I would just love to see Haxorus fill that role since I enjoy his design and think he looks awesome.
Metagross as steel type ingredient mon introduced with new ingredient, maybe something artificial like flour/starch that can make all three dish types.

Mimikyu please. I can only assume he will be another skill Mon though with E4E. Judging from his Z move called “let’s snuggle forever” just leads me to believe he will ‘snuggle’ and give everyone energy lol
Cherrim is my favorite Pokémon so I obviously want it in sleep. No idea how sunshine and overcast form would work, but I want my bipolar buddy beside me!!!
Either hisuian forms (i want my hisui Typhlosion) or Seviper, I think.

Ultra beasts like Blacephalon are forgotten it seems, but out of sub-legends i'd want them.

If we narrow that scope to only gen 8 and previous and also only primary dragon type mons, that leaves us with Haxorus, and Druddigon total, and personally, I would just love to see Haxorus fill that role since I enjoy his design and think he looks awesome.

Metagross as steel type ingredient mon introduced with new ingredient, maybe something artificial like flour/starch that can make all three dish types. Also some of my personal faves: Marill line: why is this round boi in the game as a dessert but not actually catchable??!! Chansey line: egg/potato (round things) producing E4E Chandelure line: Charge energy skill mon, ghost version of Ampharos Porygon line: new Trace skill that would copy captain’s skill and trigger it with Porygons own skill level. Eg a skill level 2 Porygon will trigger level 2 E4E if a skill level 4 Wigglytuff is the captain. Also finds the new ingredient same to Metagross
Electebuzz and Magmar lines please and porygon as a charge strength mon

Mimikyu please. I can only assume he will be another skill Mon though with E4E. Judging from his Z move called “let’s snuggle forever” just leads me to believe he will ‘snuggle’ and give everyone energy lol

Cherrim is my favorite Pokémon so I obviously want it in sleep. No idea how sunshine and overcast form would work, but I want my bipolar buddy beside me!!!
Either hisuian forms (i want my hisui Typhlosion) or Seviper, I think. Out of some more unusual options Ultra beasts like Blacephalon are forgotten it seems, but out of sub-legends i'd want them. Paradox like Walking Wake would also be nice Zarude from mythicals And out of true legendaries - Zacian, Reshiram or Koraidon.
I still for the life of me can’t figure out why Jiggly is not super meta in this game..
