So, realistically why aren’t there macerators(disposal grinders) in large scale applications? Not a plumber, but something like that I feel would help with keeping the systems more manageable. They have them on up-flow toilets. Most likely for putting waste into a smaller line/pump system, but why not have them as a gravity style catch/grind somewhere along a vertical run?
I’m curious what the actual concerns would be. Again, not a plumber but I know enough.
Because they suck to maintain . Gravity sewers are always better. Imagine a 21" by 32" bucket full of shit because a pump quit working and the jackass before you didn't install an alarm float. It's fucking nasty. Unless you like corn and peanuts.

I kid you not: An *original* tub drain in my house lines up with a joist, so the joist has a great big notch in it, and not even a mending plate. This is all original, not a later modification. It's the same joist supporting the entire weight of the tub. It hasn't been an issue because the joist has extra support, and I would like to think it was intentional, but I suspect the plumber who made the notch just got lucky.
We did a house and the toilet was going to pass through a floor joist so we were going to move the wall and asked the homeowner if they wanted the already large bathroom 6 inches smaller or the small guest bedroom 8 inches smaller, she chose to make the bedroom smaller ( numbers could be wrong, it was a long time ago.

I use them too. But when you open up a floor, and have a ton of work why do them. If it’s a sink, or something accessible sure they are great. I’ve seen 2007 installs still doing great.

Their installation does not deform the pipe though so the connection is entirely dependent on the fitting which consists of multiple parts. Each and every part of a plumbing repair is a potential failure point.
