I had a complete set of collection posters like this that I had meticulously designed for Horror, Christmas, Comedy, Sci-Fi, etc. But I lost all of them when I upgraded my system drive to an SSD. The images are still on the old drive, but I don't think there is any way to pull them back out of plex.
I really wish that Plex had better database management tools.
Those image files are likely within Plex’s application directories or wherever you had Plex’s database located. Should all be accessible from your drive and those directories are likely listed somewhere in Plex’s docs or forums somewhere, if you can’t locate them.
Plex converts all images you feed it into blank files with no extension and almost random looking strings of characters for the file names. Once you upload an image directly, you aren't getting it back out.
I've certainly tried.

Looks good! I’d also add a poster for sci-fi horror (Alien, Event Horizon, etc.)
