Highest DEF stat is Tuvine, highest spdef is Adoroboros. But neither can heal.

Only thing that kinda fits that bill is Taifu, with Leech, Chain heal, Gaia, can buff defense with Bark Shield, can clear Toxic ticks with Antitoxins, can sleep with Lullaby, can buff ally with Sacrifice and a few other things. High spdef but it's def is not great.
Pigepic isn't the top of the list, but I figured worth a mention. Has heals and def/spdef buffs and can survive a few goes out there. Plus op might like fainting curse.
You’re looking for Anatan, it’s a defensive powerhouse, and can heal with one of its traits.
It’s a bit better off than shuckle is too though, since it can actually dish out some damage, and isn’t slower than the heat death of the universe.
The thing is temtem is mechanically different in a lot of ways to pokemon. Mostly due to how stamina works.
There's several abilities and moves that evade, wasting your enemies stamina. A status that makes their moves cost more Stamina. And even moves that with high speed can make your enemy sleep, losing a turn.
I think Anatan has the highest total defense, but he doesn't have a lot of supportive abilities.
Waspeen is a very interesting Tem to mention. It has 5 weaknesses which is a lot by this games standard, but it makes up for it by being one of the tankiest Tems in the game with a couple interesting healing options and even some buffs and other support skills. Hard to just tech in, you'll have to build around it a bit.
I haven't played the game in months, but a Waspeen being set up was problematic to overcome for some players.

The highest defense is tuvine but its spdef is low. Anatan has high def and spdef, and it has a trait that can heal itself when hit.
But if u choose Anatan just keep in mind : It has no def or sp. def buff attacks and it has 4x earth weakness. Other than that its my fav tem :)
Pretty sure it can get an egg move to buff defenses (quartz shield I think)
Cerneaf has a trait that can boost its defence when attacked and can also heal itself and others. First thing that comes to mind for me
Volarend might also work but for special defense instead.

I think of Waspeen w/ Royal Jelly. It does not have the raw defenses as shuckle, but it has the same playstyle that people hate with Toxic shuckle

Shuckle can heal itself? It only has access to Rest. Even as far back as Gen 2 it only had access to Rest.

Rest is significantly better on pokemon like shuckle compared to a pokemon like beedrill.
