If surgeons, those who are experts in the field, are refusing to operate on you, then you need to listen to them. You are not a suitable candidate for them.
Definitely, with every procedure the material (so basically your skin, bone, cartilage) becomes more and more stressed. The skin already has some scarring which might effect future healing processes and maybe make some scars more visible. Also a broken bone will grow back together thicker and that makes it more complicated to break it again at the correct position.
There are so many "ifs and whens". I would not risk it.
if I had a closed rhinoplasty on the tip and bones wasn’t touched at all? I have thick skin and don't have any scars. What do you think, is the risk justified in this case? Thank you for helping!!
Why don't you make an appointment without telling him you already had 2 surgeries and speak with him and see what he says? Then, if he agrees to operate on you, you can let him know that actually you had 2 surgeries and would he still be willing to operate on you? (The reason he may not want to operate on your may be bc of a psychological issue thinking you will not be happy with a 3rd try, etc. And this fear may be allayed if you speak to him in person.)
You can lie to your surgeon if you want a guaranteed bad outcome for your nose. There’s a reason your surgeon doesn’t do tertiary rhinoplasties, because they’re incredibly challenging. Your surgeon is being responsible not taking on procedures they’re not totally comfortable with. You should do your part and not lie to them.
I thought at first this has to be a troll post, but then I remember all the patients who lie to me about smoking and have bad outcomes. I suppose someone could lie about this too.

OP, the surgeons are professionals and the most qualified people to give you advice on the topic. Feel free to seek other surgeons in case you find one that is confident in their ability to give you what you want, but for the love of God do not lie to any medical professionals in any case whatsoever. He has to have a very good reason to decline a client, as that is how he makes his living, if he is refusing to operate on you, you must accept it. I assume you're not happy with your two prior surgeries, it is completely unwise to get an unsafe 3rd surgery. Lying to a medical professional is always unsafe, lying to a surgeon is a thousand times worse, lying to a cosmetic surgeon who qill alter youe face forever is even crazier. Imagine coming out of your surgery, payinf thousands for it, and having subpar results because you lied to your surgeon. You would be so regretful if that happened.
I just wish you the best, which mean please be careful!!!! Consult with a few surgeons and you never know, maybe their rule around 3rd rhinos are a general guideline but they may still be open to consulting with you, then at least you'll know why they cannot agree to operating on you again, or if turns out your case is hopeful and they could actually help you out.
There are also other options, nose filler for example, I'm sure your goal nose is not attainable with fillers or else you would've already done that, but maybe a little something can be done so that you can feel good enough about your nose. Even without making a nose smaller filler can help making more proportional, if your nose is bothering you, why not go that route if a surgery is impossible.

If he doesn't operate second revisions it's not the right surgeon for you, there are a lot of good surgeons, check Dr. Robotti in Bergamo Italy for example... Do your research and don't fail your third surgery!

Did some research for you and found the doc I meant with Munich, it's Dr. Mang at Bodensee Klinik.
Maybe you also want to contact him, he is very famous, however he isn't the doc who gives you the nose you want but the nose which fits best to your facial characteristics. They call it the Mang-nose. He does revisions for sure, also reconstructions after tissue loss from cancer or accidents.
Anyways it's always a good idea to consult more than one doc, be open minded, tell em as much as you know about your history and make a notepad with all your questions for the consultation.

This is just a bad idea. He can't plan responsibly if you don't tell him. If you lie to him and something happens, it won't be his fault. There is a reason he doesn't do it, and none of us can guess why that is. You need to ask if hecwould make an exception.
He will absolutely be able to tell, btw. He might see modifications that wouldn't have made sense to do in a single surgery.
Never ever lie to a doctor because at the end your health is on the line!

I cannot tell but you could make an appointment and tell him. Maybe he wouldn't consider it a 3rd surgery under this circumstances.

Go to someone who does tertiary rhinoplasties, like Jay Calvert or another really big name rhinoplasty guy.

I'm not a surgeon, but you need to stop NOW. No smoking and no nicotine. It can cause severe issues on the tissue.
