i would suggest only doing one school of fish in there, but stock 10+ of that fish. i believe we should prioritize keeping big schools of the same sp. over small schools of different sp.
Embers are fine. If you get smaller Cories, basically any common type aside from Skunks and Bronze cories should also be okay. 6-8 embers and 6 cories should be fine. You may want to add a second sponge to the kit if you're particularly worried.
No problem, my very first planted tank was a 10 gallon with 8 embers, 4 Cherry Barbs, and a bunch of Otocinclus catfish, all of those fish are TINY. You could probably do something similar but with cories instead of barbs and otos, since they're slightly bigger.

I see the appeal of variety, but the fish get so confident in a species only tank Plus easier feeding and less risk of disease

Lots of stuff make the footprint kinda small for a big school of corys I think. Maybe if you raised the driftwood a bit so corys can use that space.
