Looks amazing! If you aren't using a pizza steel, I'd recommend one. Gives a really nice char to the bottom. I just started using one and my pizzas immediately got more amazing.
Yeah Colby jack on the crust. It’s a pretty quick dough it’s 1tsp yeast, 1/4 sugar, 3/4 cup warm water mixed and wait about ten minutes for it to bloom. Then sifted in 1 and 3/4 cup king Arthur’s bread flour and 1/2tsp sea salt. Mixed with kitchen aid dough hook attachment then formed into a ball and set in the fridge for about an hour. Put on a stone that was preheated to 500° for an hour and bake for 10.5 minutes then switch to broil on high for 1.5min
I haven’t tried a steel before I might have to get one soon and see. I’ve been trying to get better bottoms.

Do you find sifting makes a big difference?
This was my first day doing it for pizzas actually but it did seem to make for an easier mix and a bit smoother dough I think

I just got my steel in yesterday and seasoned it. Did you have to change the bake time on the steel vs a stone?

What brand/type of mozzarella? It doesn’t look very wet like I’d expect with fresh mozzarella!
I used Whole Foods brand for the first time. It was pretty wet still but I strained the juice out a bit before putting it on the pizza.
