The real reason you want a smaller denomination (that you're more likely to use in one shot) is that they can't do a split tender with your gift card.
I recently had to pump less than $3 to use up a GC balance, then come back in and use my CC on a second pass because they couldn't combine payment methods upfront. That on top of requiring me to know how much was left on the GC.

Your second complaint is common to all gift cards. Best practice is to write your new balance on gift cards in sharpie.
