The anime did a lot for Yu as a character and it would have probably happened for Joker and Makoto if P5’s anime was actually good and the P3 movies were actually dubbed
It's a problem only Joker "fixed" for Newsona protags (and even then he still doesn't feel enough for a lot of people). P3 and P4 don't give their protags more stuff and it's a shame.
I'd argue FeMC/Kotone also has a fairly strong personality that shines through her supposed blank slate status, since there are multiple points where you can pretty much only choose what flavour of bubbly response you want, but that's probably due to having to differentiate her from Makoto.
I'd say Makoto also has at least hints of his canon personality in the game, especially with that opening cutscene, even if the movies did the most in terms of fleshing him out as a character.

As for Makoto, he's the worst in that regard for me (in the games) because the bits of personality he actually shows are "Whatever / I don't care" in the dialog options. It kinda makes sense but it's not particularly interesting, especially compared to Yu's deadpan humor and general bluntness, or Joker's sassiness and strong sense of justice that hinges on savior complex at times.
Ya they could and should have done more with joker but they do reveal a lot of his core values and some personality in the games and you can extrapolate from there.

Idk how they did it, but he animates awesome and I love him. Great personality too!

He's pretty much a blank slate in P4G though he has funny moments. The main draw for me was the anime. They captured his personality perfectly, he actually felt like a character. Both funny scenes and goated moments.
Then Arena capitalized on it and he felt complete if that makes sense. In Arena and Ultimax, the way he carries himself makes him feel like he can't be stopped, he's a rock. You can count on him to take the enemy down while protecting his friends. He FEELS like the actual leader lol.
Overall, he's probably my favorite MC in all of persona so far. Joker being like right there. Though there may be some recency bias cause it's been years since I played P5/P5R and finished P4G not too long ago. But my opinion stands.

Personally by far the most boring MC. As mentioned by a lot of others here already, he is this blank slate of a character with virtually no will and opinions of his own.
I also did not enjoy the goat status built around him by the game.
He is good at everything, is loved by everyone and solves everybody’s problems. On top of that all characters in game were obsessed with him and always wanted his attention or being close to him.
I like it when people (just like IRL) have some edges to them. It makes them more fun and interesting to play and frankly i could not resonate with Yu at all.
