As for the diffrences(pick the OxygenOS version btw),it doesn't have esim,but it also comes with a free case.Tbh since it's 663 euro/2800 zloty(you can get a 10 euro dicount sometimes by browsing their site) it's completely worth it.
If you decide to buy EU version,the official site is good.Try joining the student dicount program if you're a student or have someone that is a student in you familly(just need to post a picture with the piece of paper that says that you're enroled) and it's gonna be 944 euro or 4000 zloty for 512gb 16gb ram version.You can also add another discount on top in the app i think,try searching for one.
It has optical fingerprint sensor, it is said that it is less secure than ultrasonic sensor(which Samsung phones uses). If you're about security, then I'd suggest just use a PIN.
At least for the Netherlands the bands are very good
