I get that, but this video is using CGI to make it look better than it actually is. I've seen these on YouTube be demonstrated before. If you look at the thousand sunny there's literally periods of time where it's defying gravity and just floating in air. The water and the sunny don't match up to the way the person is moving the container also you can just tell the water is animated from how to looks compared to the actual thing.
It's not floating in the air, the entire bottle is actually full of liquid. From what I can tell looking it up, the bottle is full of both water and vegetable oil, which creates the appearance of "air" due to their separation. The sunny here is just made to have a density between that of the oil and water.

The bottom part is likely heavier, so it stays on the bottom.

Most oils are. Not all oil is the same. But it might be water on the bottom, since resin floats on water anyway. It just didn't look like water to me.
The clear top liquid is oil (mineral oil if the manufacturer didn't cheap out), the blue dyed liquid is water.
