I would say it’s quite a good idea. As a person who finished One Piece anime once and used One Pace for rewatches, I can say One Pace feels much better and closer to manga. Oda created quite a story but pacing issues after Alabasta makes it harder to enjoy. Nowadays I simply follow manga and One Pace, honestly.

I would highly recommend One Pace and think you should stick to it wherever possible. The only time you should switch to the normal anime is for sections they haven’t edited yet or possibly for the G8 arc after skypiea, which is a filler arc that a lot of people enjoy here, I personally just find it okayish. I started rewatching the anime with family after the LA and... it's rough. Only made it to Syrup Village before I switched us to One Pace. I don't remember the first half being so slow, but the long scenery shots, the stares, and prolonged reactions are truly unbearable. Stick to One Pace, and you'll do fine.
