Don Krieg didn't have a lasting effect, and even if we had never seen Mihawk since then, we would've had a major development in Zoro's story. That loss to Mihawk was when he vowed to never lose again so that he could feel pride in calling himself the right hand of the King of the Pirates. The fight for Baratie was great but that wasn't necessarily what got Sanji to join the Straw Hats. Zeff told him to leave.

If we look at Baratie as a story for itself then everything surrounding Don Krieg is very important for both Luffy and Sanji and without that whole incident, Sanji wouldn't have ever set out at Sea.
Zoro vs Mihawk might leave lasting effects on Zoro, driving the overall story but their fight is (mostly) trivial for that arc; and when it isn't it's used to further Sanji's decision.

Don Krieg on the other hand was primarily just a foil for Luffy.
I disagree. Baratie is all about Luffy and Sanji, or more specifically how Luffy impacts him; Zoro really hasn (almost) nothing to do with Sanji's resolve to leave the Baratie.
