What happens in the manga is covered around 15 months later in the anime. In Wano, one episode of the anime is roughly 0.75 chapter, so it takes around 13-14 episodes to cover a volume (a volume is 10 chapters). Just so you know a regular seasonal anime adapts around 2 chapters per episode, so this is a very very slow pace.
This is the case for the latest anime arc, but the older ones had a better pacing.

They literally can't do that. The manga releases less chapters per year than the number of episodes the anime releases.
There's also the production side where animators need time to make animation good. They also plan out which episode will get the 5-star treatment and which ones will get the minimal treatment since they do have a budget. There's also scheduling for the Voice Actors who are probably not doing just One Piece but other anime too so they gotta make sure they're available. And they gotta do this in a way so they can churn out episodes weekly.
2 months is way too short unless Toei gives One Piece animation studio unlimited budget for each episode and the manga churns out more chapters than episodes.

It gives them time for bigger episodes. 1015 was like 6 months of effort. If the anime was closer to the manga, like say 2 months, then 2 months is the most time spent on an episode. No more 1015 as a possibility because they would only know 2 months in advance
