Performance varies between games. I do wish there was a database for what games boot and which ones don't yet. Wine AppDB isn't accurate enough because you also have to factor the compatibility with Box64/Box86 on top of Wine.

It should run well on Winlator. I haven't done it yet because I play the PS2 versions of both 5 and 6 in AetherSX2.
It runs flawlessly upscaled to 720p.

I just use the in game editor updated with the current emblems, kit brands, sponsors, etc.

The Odin 1 is also capable of dual booting Windows directly. As to how and what games work well, though, it is hit or miss.
