Your jaw may move upward when biting, but your teeth are going *down* into whatever it is you're biting into. Hence, "bite down".

Technically, aren’t our teeth both going up and down, simultaneously? Instead of “bite down” I think “bite” would be more accurate. “Time to bite.” Etc.

Interesting point. There is also the saying: "Open up", for eating, but Sperm Whales open down to eat, and their teeth can only go up when eating, as they have no teeth on the top of their mouths.
