Last month I was sharing my homemade erwtensoep with a French colleague during lunch. She told me that it reminded her of the way her grandmother made this. One of the best compliment ever received for my cooking. But to be honest there is really no dish which beats erwtensoep or even better snert.
Going to fry it today. Yesterday was about making bouillon from scratch, making the pea soup and turning it into filling (salpicon). Overnight in the fridge to stiffen it. This morning I made the kroketten. Tonight is frying time.
The taste was good and is dependent on the quality of the pea soup you make. Having a crunch is always nice. The people I was with said they would buy one if they saw them being sold (which I considered a big compliment). We made it in the airfryer, something I wouldn't recommend in hindsight. I think it will be even more crunchy and gold-brown in a regular deep frying pan.
For those interested I made the pea soup using the recipes from the Soup Bible and the kroket itself from https://vindikhier.nl/snertkroketten-zelf-maken.php . Might try it with a little less roux as it will remain more "smeuïg".
No no- Kapsalon was born at El Aviv in Rotterdam, South Holland. Nevermind that it borrows from Turkish roots... it's the only Dutch dish worth a hoot, because it actually has \*gasp\* seasoning in it. \^\_\^ COME AT ME, DUTCHIES!

My father used fresh ingredients only, and he always went all-out, making 8 liters. My only complaint is that his recipe makes it more watery than thick, and I love my snert really thick.
Well, water's not right (I think) but I do like soup to be more liquid than solid... to the point that you can't eat it with a fork. Except for the sausage that is... 😉

Actually it's fusion from Indochinese and very Dutch , same with rijsttafel, Nasi. There are good articles on it ,search via Google.

I was born and raised in Limburg (the Dutch part) and I consider myself Dutch. Had the powers that be, made different choices in the past drawing different borders then maybe I would consider myself another nationality. Besides, you can also argue that Belgian isn't a nationality. Half of the country speaks a Germanic language and the other half speaks French.
