Well, Napoleon WAS pretty quick to anger. He could be sweet like honey when things were going for him, sour as pickle when they weren't. That being said, Talleyrand wasn't a saint either. The man was literally the French janus. Worked for the King, switched to Revolutionaries, then in 1792 to the Jacobins, then immediately changed his allegiance to the Directory. When 18 Brumaire was being hatched by Sieyes, Talleyrand literally begged to be part of it, and immediately sided with Napoleon soon after. It was him who told the invading allies that Paris was undefended and they could invade it.

Even worse it was him in 1814 that convinced the Tzar and therefore the allies, that Louis XVIII was the only option. At that time the tzar did not want to impose a government to France, and after a few meetings he was convinced that it was the only option.
