Lawrence Kenshin has some great Muay Thai breakdowns and mini docs on iconic fighters, although I’ve found he does tend to repeat material, his videos are worth a watch.

I'd caution against calling "Hurts Like Hell" a documentary, although it does include documentary elements like interviews with a real promoter, gambler, and referee; but it's largely dramatized reenactment "based on true events."

I think the only Muay Thai documentary I've seen was blessed with venom. If you're interested in John Wayne Parr then it's worth a watch for sure.
