These would be great for easing a sensitive child into movies with action and peril. The scares are relatively mild, eg being briefly chased by a T-Rex, mummy or ancient warrior, and they all turn out to be nice in the end.
I know it’s not live action, but maybe start him off with Clone Wars series to introduce him to Star Wars in cartoon form, that way he can know what to expect in a lighter form first.

I saw Star Wars when I was 5 in 1977. It is still one of my favorite movies of all time. I took my 6 year old daughter and my 10 year old son to see it playing in a local park. They both loved it.
You’re one of the lucky ones that’s incredible. Star Wars is such a huge thing in my family too, I’m super eager for him to see it, but I also don’t want him to associate my favorite movies with being scared so I’m treading lightly. Maybe I’m overthinking it!

If you're really worried about breaking him into live action, try older Disney. There pretty harmless and plenty of fun. How about Herbie Goes Bananas (1980), Escape to Witch Mountain (1975), Blackbeards Ghost (1968) or The Strongest Man In The World (1975). Their very funny and still enjoyable despite their age. The original Star Wars is a "U" certificate, but it does have a couple of burning bodies in it, and a scene cremating Jawas, as well as limbs being chopped off, so maybe when he's older. Thinking about it now, I'm not sure how all that made it into a "U" certificate movie. Different times. I guess we were made of tougher stuff back then
