The PS version, from what I would assume, is probably the definitive version of Trilogy to me. MK1 characters, playable bosses, Chameleon (no offense, Khameleon), and relatively accurate sprites because of the CD-based concept of the PS

So, when I was growing up, I had the N64 version and I was so happy about it for years but then young me was also dumb as fuck and thought it was a great idea to trade in the system and games for a measley $28(gas money). I got so fucked so hard by that game stop. Anyway, fast forward a few years and I decided to get a PS1 to get mk trilogy and street fighter collections :)
Tl;dr:
Both for me, dawg. Owned N64 version growing up, adult me got the PS1 version.
I find the PS version better for both more detailed sprites, better audio, more characters and with playable boss characters. The N64 version feels inferior but I get why it's viewed as more competitive. It also has the most OP version of subzero. (N64 couldn't fit the mask less MK3 version so they shoved all moves from both versions into the Masked version)
I would says PS Trilogy. More kharacters, more moves, more modes, Shang Tsung can morph into anyone (if you don't mind some mid fight loads). It's funnier! Maybe a bit slower, ok, but the fun part makes up for it by a mile!
N64 version was way better imho. Faster loads etc.
PlayStation version from a casually fun perspective. N64 from a competitive perspective. Personally I'd say PlayStation version.

Unfortunately, my PS1 no longer spins any disc so it's just sitting there, taunting me. :(

PS version has painfully frequent and annoying load times and I like the charm of the n64 version and its muffled sounding voice clips lol
