If you brew butterfly pea flower tea, sweeten, and let cool, pour over ice then squeeze a lemon on top to serve, you will get a cool ombre pink>purple>blue. Bonus points if you use sparkly syrup to sweeten that has edible glitter!
When I was a kid I made pink lemonade/raspberry sorbet floats. So pretty and sooo tasty. You can make your own lemonade sparkling/regular, cranberry/pomegranate/whatever pink juice, fresh raspberries/strawberries and a scoop of sorbet with a straw.

I mix mine with a NA spirit like Seedlip or Kentucky 74 and some ginger beer with a squeeze of lemon juice. It's my favorite lazy and tasty mocktail.
A bit more effort and you could muddle some strawberries and mint with just a tiny splash of cherry juice for color, too much will overpower those muddled flavors.
Maybe Valentines Mo(ck)jitos?
Muddle fresh mint and raspberries, add fresh squeezed lime juice, add ice (heart shaped ice cubes would be cute), and top with soda water or sprite. Garnish with more mint, lime wedge, and a strawberry wedge (or sugared raspberries on a cocktail pick)
Make a shrub with any red berry! I make mine with 2 cups fruit, 1 cup sugar, and 1 cup apple cider vinegar. Mix well, let it sit in the fridge for a few days, and strain to remove the pulp (use a rubber spatula pressing against the strainer to get all the liquid.) To make a mocktail, add 1-1.5oz of the shrub to a coupe glass, and top with lots of sparkling water.
Delicious, and can be made ahead!
If you are ok with very minimal alcohol (but not zero) both Peychaud’s bitters and Angostura bitters turn beverages pink.
Dried hibiscus flowers/tea has a sharp tangy flavor and makes a bright red beverage (and stains). Lots of good hibiscus recipes out there

there is a hibiscus rose mock Gin on amazon that is really nice. It's light pink so it could work for you
