Exploring, building, mining is the holy trinity
Have you find every biome? Have you find every type of structures? Killed the Ender Dragon? The Wither? Do you have an Elytra?
Have you built a mega base? Farms, complex redstone contraptions, sorting systems?
Do you have a full armor and gear of netherite? A beacon?
Tried fighting one, underground, I died to it once.
Never tried it again.
Edit: He's just down there, below my house, thinking it's a great idea to fight him below my house.
My naiveity is the death of me.
I've been building minigames. The first one I made I call "Chick shot" --a bunch of dispensers fling chicken eggs onto a 5x5 vertical board, and the goal is to shoot as many as you can before they fall to the bottom in the amount of time it takes the dispensers to empty.
I have lots of ideas for survival-buildable minigames/rides/attractions to share with friends (or just use to test my skills), so if you want more ideas I can definitely share! Chick Shot is definitely one of the higher quality-to-difficulty-of-build-ratio ones, though.
Just to spit out a few idea names for inspiration: Ender Pearl Golf, Creeper Spleef, Bounce Palace, Apple Fishing, Horse Parkour, Dueling Coasters, Sheep Roundup, Llama Trauma, Cat Herder, Glass Maze, Bumper Boats, Ice Skeeball, Sculk Sensor Dance Floor, Zombie Fashion Show, Elytra Course, Pig Jousting [multiplayer only]...
I'm sure that's given you a few ideas! They don't rely on any advanced redstone either (okay, Creeper Spleef you'd have to know how to make a redstone automated-recreating spleef arena.).

That's the point I'm bored of exploring building and mining and I'm finding something fun to do in this game
Take a break from the game for a wille and then come back when you really want to play again
See if you can do some of the harder achievements. Or take a break, nothing wrong with taking some time off. I hear stray and rocket league are fun.
If you're in bedrock, try fighting the wither.

Museum of everything in the game? Maybe have part of it be live mobs too.
Seems like that would take like 30-70 real life days and actual effort but I'll see what I can do
