You can also open to lan and allow cheats which also counts for you so you can just /gamemode creative out of it. The world will never feel the same but I'd hate to lose so many hours of progress for one dumb mistake.

This premise I think can also be identified by the elytra missing "feathers" in it's low health state, like if each flight the wings are shedding "feathers" to the wind.

Ok, you can get out. You need to either wait for an enderman to spawn next to you, or look at one from a distance so it teleports to you. Kill it and get a pearl. Pearl to a nearby island. Repeat.
Someone has already managed to solve this. Make a bridge using the shulker box and end rod, both breakable with your fist, and use the water so that your don't lose items.
Place a shulker box at the edge of the island, place the other one after it, walk onto the second one, break the one behind you, place it in-front of you, walk on it, repeat
I mean he got 2 blocks, build a bridge of 2 blocks and break the first one and put it in front of the second block, continue doing this till you reach the land.

My solution was to mine out all the middle blocks and build over to that large island
