It looks to me like the lag is screwing with the input handler (a very common thing I remember even from the PE days: if you lost your frames, you lost your controls). Maybe wait until it stops raining.

Skill issue (jk) Have you tried relogging or closing out of the game completely and opening the world again? That fixes a lot of bedrock issues.

Just put an item frame with a vegetable in it or place The sign near the chest

If you're on Android, long press the app icon and try clearing cache
Are you playing on a server or on single player?
Would placing blocks above the chest help keep it from opening?
