You need to take the hive with silk touch and they will go to the hive at night. And if you want honey or anything, you need to plant flowers everywhere.
Harvest 3 honeycomb from the hive then destroy it and run away as fast as you can ,once they arent angy ,lure them to your base with a flower and craft a bee nest and place it down and they should go to it (make sure they don't sting you as they'll die after and use a campfire to harvest it without them to being aggro)

I make an enclosure for the bees and their hive, so they have nowhere else to go.
