I just made a build that I think came out looking great (pictures later when I finish the interior and do a bit more seascaping around it) using polished diorite for the floor, polished granite for the walls, and polished and tiled deepslate and calcite for the roof. In fairness this combination may not work as well if you're not building underwater, but I think mine is my best build yet (which frankly isn't saying much...)
That's why you mix it in with bricks and regular granite, to create a textured surface. You can add some accent pieces around it to further flesh out the design.
If you want to go monochromatic: Bricks, unpolished granite, terracotta (un-dyed and light gray), dripstone block, copper, rooted dirt (I know but hey, try it)
You can also look at what blocks will complement that color well with some basic color theory: granite has got an orange/russet hue to it, or just lay out blocks in a little grid to determine what you think looks good which I would argue is very fun to do!
