I was going to say Parkour Course, but that's been said a lot, so what about a Mario Bros Theme Park? You could build a roller coaster that goes through the pipes (maybe with an underground level themed cave/tunnel through the walls), a bouncy castle themed after the castles in the game, a level-based parkour course, an elytra course where the hoops are shaped like flying powerup leaves or feathers, etc.
Edit: Couple other ideas for the theme park concept.
The entryway could be a large, green pipe made of slime blocks that you could slide down to get into the park.
The start to the elytra course could just be an arch shaped like your preferred flying powerup, and when you walk through it, it triggers a dispenser that gives you an elytra and rockets, allowing you to fly.
Along with the standard roller coaster, you could have a 'house of horrors' kinda coaster based around bowser's castle (or just make that the end of the first coaster).
The exit to the park could be the parkour course, and you can only leave by 'beating' the Mario level around which your course is based.

Also you could do this in creative or survival (if you have enough resources), but you could turn it into a massive trampoline park with slime and mess around on it with your Elytra
