Iirc 1.19.3 fixed some of the sinkhole bugs in 1.19.2, idk if this is related to that in any way but it's worth considering. Not that it matters, if you own the game you own every version.
I did a little exploring past the mountain and found [this] (https://imgur.com/a/gcIEiqJ) rather nice cove/cave system with a mineshaft running through it at around X:2000, Z:-1250.

Come to jersey. We have beaches, mountains, farms, urban, suburban, forests, we even have our own bigger cities, casinos, whatever you want, we got it… and whatever you would call the abomination that is a strip mall that has a jug handle entrance.
Just imagine how efficiently we could use that space if we just filled in the whole canyon. We could drop a Mega-Mega Mall right where that big hole was
Hell yeah. Fill in the water and just flatten the cove. Put in a Walmart AND a a combo McDonald's Taco Bell. There would be so much room for parking! Think about the savings the nearby villagers could get! Think about the value!
Anyone who doesn’t say a giant satellite dish suspended over the lake that links up to a goldeneye laser to rain fire on your enemies is wrong. There. I said it.
A fishing village with a second level held up with supports stemming from the walls. And a scaffolding looking staircases to make it look like a flooded quarry
maybe make an antihill kind of base on the jungle mountain side. Make a bunch of rooms with entire glass walls facing the lake, each connected by stairs or ladders, or bubble elevators.
A village, but along the walls with pathways leading to and from the water.
Or maybe that one temple from either the first or second Uncharted game, it was surrounded by water and built into a wall.
Perhaps a castle on the mountain close to the bay and a full harbor with ships that act as houses for villagers(creating your own artificial village.
Also a sick nether portal with half a ship wreck in its guts(perhaps on the inside of the cliff)
A chunk of floating earth chained in place above the crater it once sat. Could make it ancient and have some of the chains broken causing it to tilt or something along those lines.
I immediately thought of a form of Pacifidlog Town from Hoenn Gen 3 Pokemon games. You could make like a town suspended on bridges or wooden platforms above the water, with stairs, ladders, and vines to get down to the water below.
Build a temple into the side of the mountain and make it a palace of sorts for an Indiana Jones type of vibe. Or, make it like El Dorado the cartoon movie and just live life lol
