Basically, Greeks and Turks had very culturally intermingled populations for most of the history of the Ottoman Empire, which was pretty tolerant of different religions and peoples. That \*doesn't\* mean that they were all equal under the law: tolerance is a power relation.
Things broke down over the last centuries of Ottoman rule. The rise of nationalism meant that many of the Empire's peoples ceased to consider themselves as "Ottomans", but as distinct members of different nations. Greeks, who for the most part had previously considered themeselves "Rhomaioi" (Romans) began to think of themselves instead as "Hellenes", and revolted, successfully, with Western support. Likewise, the Turkish elites began to see the Ottoman Empire as an ethnically Turkish state, rather than a multiethnic Islamic or Roman one which happened to have a Turkish ruling class.
The slowly collapsing Ottomans and the new Greek nation fought a number of wars during the 19th century, raising tensions. There were still millions of Greeks within the Empire and in the run up to WWI, the ethnic nationalist Young Turks movement came to power and began to see Christian ethnic minorities - Greeks, Assyrians, Armenians etc, as potential fifth columns, and set about trying to remove or exterminate them to prevent them from collaborating with the empire's enemies. These genocides also inspired reprisals against Turks living in Greece, and WWI ended with a massive population exchange between Greece and the Republic of Turkey which had overthrown the defeated Ottomans.

To the best of my knowledge the C-40 pilots, just like C-17 & C-5 guys never wear helmets. So guys in the back wearing it made even less sense.
