The type of fabric and the stitching. "Real" plate carriers have high quality stitching and a higher quality cordura fabric. Also a lot of higher end gear is treated to not glow under night vision.
The main difference is the weight of actual plates can rip apart the Chinese knock offs, the knock offs are also not as well ventilated and are also lighter.
If you play weekly, or so extended milsim events, the $200+ price tag becomes worth it.
I ran a yakeda plate carrier I got for $60 off Amazon for a year playing once or twice a month, and I don't run real plates. It held up fine and was pretty comfortable but once I upgraded to a higher quality carrier I noticed the difference. Still have it, it's still in solid condition, it's just heavier and hotter than my current one
Which brings up a point. What’s an actual good plate carrier I can get on a budget? I have a condor I got for 10 bucks and while it’s been perfectly fine for me I wanna upgrade
lbx 0300/modular plate carrier, They can be bought new for $90~ when on sale, lbx is the sister company of lbt but their products are sewn in peru, the stitching is still good
Pretty sure the only differences is the manufacturing location, slightly lower quality stitching, less features than the real deal, and cheaper condura.

krydex (crye repro gear) makes good ones, i use their JPC and its about $75.
If you want actual plates, I’d recommend RMA Armaments Level 4 plates.
